I'm not a chef by any means! I do cook every night nutritious meals from my family. Sometimes they are quick thrown together meals, like sausage and noodles (DS4 favourite! He'd eat it every night if I let him!) and other times I like to go out on a limb and experiment. When I experiment, I usually choose one new product and make a meal around it! I have never tried coconut oil so I didn't know what to expect. The first thing I noticed when I opened the jar was sweet coconut scent. It smelled fresh and inviting. The texture was smooth and thick. It scooped out like butter. I found the coconut oil very easy to work with. It liquified quickly and provided a nice aroma while cooking. I found that my food cooked evenly and didn't burn as quickly as it does with canola oil (my usual oil of choice!). It was really easy to work with and I look forward to incorporating it into my baking next time I get the urge for a sweet treat!Coconut oil and maple pork chops
Ingredients
4 Pork chops1/4 cup maple syrup
1/4 water
1/4 cups of chopped onion
1 Tbsp white vinegar
1 Tbsp Worcestershire sauce
1/2 tsp Chili pepper
Salt and pepper to taste
vegetables
2 cups of cooked Rice
Directions
1. Heat 1 tbsp coconut oil in frying pan on medium high heat.2. Add pork chops to the oil (since I have small children I tend to cut the pork chops up into small pieces, it cuts down on cooking time and it saves me from having to cut it up later!)
3. Cook pork chops until they are cooked all the way through
4. While the pork chops are cooking, mix up the glaze by combining maple syrup, vinegar, wochester sauce, chili powder, onions, garlic and water
5. Add the glaze to the cooked pork chops and simmer on medium heat for 10 minutes
6. Let it cool
7. Cook rice and veggies
8. Mix together and serve.

I'm eating my favorite quick snack with it right now. Equal parts melted coconut oil and peanut butter, stirred together and put in the freezer for a few minutes. I have chopped almonds in this batch and it's divine!
ReplyDeleteWe use coconut oil in place of all other oils and shortenings. My daughter even mixes it half and half with butter for a great spread. My husband is diabetic so cinnamon rolls with the dough made with coconut oil and coconut oil instead of butter and shortening is a favorite treat. Both the cinnamon and coconut oil keep his numbers low. Last checkup his doctor said his diet is the number one contributor to his management of his diabetes. Yay! Coconut oil is the best!
