Food Fridays ~ GF Buttertart pie


Even thought the holidays are officially over, I couldn't help but posting this Friday on one of my favourite holidays treats; butter tarts. There is nothing more satisfying then the taste of the caramel buttery goodness surround by a delicious graham cracker shell.  This is my first holiday season since I was diagnosed with Celiac Disease. It was extremely difficult to pass on the homemade cookies from my mother in law and all the yummy desserts that I am accustom to during this festive season. Although I could pass up the cookies and the pies, I was not about to give up all my favourite holiday treat. Its not easy to find gluten free baked goods (or ones that taste amazing!) and usually if you do they are muffins, cakes or pies. Being the stubborn sugar lover that I am, I was not about to allow a Christmas holiday to pass with out this delectable treat. I took on the challenge and baked one myself thanks to recipe from The Brighter side of Gluten Free Blog

 Ingredients

1 cup of gf pie crust dough (recipe here) or you can use a pre made gluten free pie shell (I used a graham cracker gluten free pie shell. It was easy and delicious!)

1/3 cup butter or margarine ( I tend to use margarine because it is something always found in my fridge!)
1 cup brown sugar
2 Tbsp milk or cream ( I used homo-milk! Thanks to DD1! It provided a thick option to milk without the taste of cream ~ which I HATE!)
1/2 cup raisins
1 egg
1 tsp vanilla








Instructions

Crust
1. Purchase a pre made pie shell
or
1. Using the recipe listed above, create a homemade pie shell and place aside








Homemade pie crust

Filling

1.  In a large frying pan, heat the butter/margeraine until it is completely melted.

2.  Beat the egg, then combine the egg, vanilla, milk and brown sugar to the melted butter. Stir constantly so that the milk doesn't catch and burn.
3. When mixture is completely mixed, add in the raisins.
4. Bring to a boil and maintain for 1 min. Stir constantly.
5. Pour boiled mixture into the prepared crust and bake at 350 for 10-15 mins.
6. When crust begins to brown, remove from the oven.
7. Completely cool before cutting into individual pieces.

ENJOY!

( Unfortunately there is no after picture! It was so good that It was fully devoured before I remembered to take a pic! I will update when I make another one!)

  3. Oh my this sounds like a keeper! I am going to have to add this to my recipes. I don't think there would be any left at my place either to take pictures of it. They would be devoured instantly.

  11. Ooooh! I love butter-tarts!! They're totally that little treat I pick up in a blue moon when I feel like I deserve something sweet and yummy, lol. This GF recipe looks *fab*. Am supposed to live GF, but have swayed for the past couple years, 'cause its hard to find good, quick, easy food that simply tastes good... *oops*.
